95 Halliday Companion - 83/17% cabernet sauvignon/shiraz. Produced from grapes that see some air-drying to concentrate flavours. It's quite ripe and sweet fruited but it carries its weight and purpose well. A wine about warmth, concentration, ripeness, woody spice influence and the carriage of dried currants, dried cranberry, fig and date characters. The richness and palate saturation is impressive and well judged, so too the winemaking influence of uplifting spice and grip to tannin through the finish. Also, a mellowness from time resting before release. An impressive wine in its style. Mike Bennie

Story: One of the more intriguing wines created in biblical times was the ‘Tzimmukin’, using slightly dried grapes to increase strength and longevity. At K1 we have captured the essence of this ancient technique by slowly air drying our best parcels of Shiraz and Cabernet Sauvignon in baskets to produce a quintessential Australian blend.

Vintage: The 2018 growing season started slowly, but warmer weather eventually helped to speed things up. Fruit set throughout the region was good and the low rainfall and warm weather from January to April resulted in great sugar development, while a cooler than average March offered ideal night temperatures for colour and flavour development.

Nose: With aromas of blueberries, mulberries, plums enhanced by overtones of rosemary, nori and dark chocolate .

Palate: The palate shows great purity of fruit. Bright berry and pomegranate reduction with rosemary supporting. Line and length and persistence of flavour truly define this seductive fuller bodied red wine. The essence of K1 in a bottle

Pairing: Be daring and try this wine with a Kangaroo fillet with a creamy mushroom sauce. Click For Recipe
