Story: The 2021 GMH Meritage is a carefully crafted blend of 35% Petit Verdot, 25% Cabernet Sauvignon, 25% Malbec, and 15% Merlot. Each variety is vinified separately in small batch open fermenters to maximize extraction potential and allow ample aeration during fermentation. The wines are then aged in 3-5th use French oak barrels, a mix of hogshead and barrique, to develop their unique characteristics. The Petit Verdot predominates, amplifying the black fruits, violets, and density, while the Cabernet Sauvignon provides structure and a complex fruit spectrum. Malbec contributes gravelly tannins and blue fruits, and Merlot offers softness, seamlessly stitching the varieties together for a harmonious tannin profile and fruit weight across the palate.

Vintage: 2021 will be one for the record books in more than one way but as far as vineyards across South Australia are concerned it was near perfect. Higher than average rainfall over winter allowed vines to produce good canopy and the cool – dry summer gave us beautiful even ripening conditions. This slow ripening allows great flavour development and retention of natural acidity.

Nose: This Meritage greets you with a rich bouquet of black fruits and violets, indicative of its Petit Verdot predominance.

Palate: On the palate, the wine showcases a well-integrated blend of flavors. Black fruits and blue fruits are prominent, supported by the structure and complexity from Cabernet Sauvignon. Malbec adds gravelly tannins, and the Merlot provides a softness that unifies the tannin profile and fruit weight, resulting in a balanced and continuous tasting experience.

Pairing: The 2021 GMH Meritage pairs beautifully with a classic beef Wellington. The rich black fruits and violets of the wine complement the savory flavors of the beef and mushroom duxelles, while its structured tannins and complexity enhance the buttery, flaky pastry. This harmonious combination elevates both the dish and the wine for a truly memorable dining experience.
