Adelaide Hills
Story: The K1 Sauvignon Blanc vines are the oldest in the Adelaide Hills and are planted in a sandy loam area of the K1 by Geoff Hardy vineyard, a consistent hero of our vineyard. The vines are spur pruned to a low bud number to increase fruit quality.
Vintage: The 2025 Vintage at K1 was initiated by a very wet spring after a relatively dry July, August and September. The wet period included two large rainfalls during November and early December leading to spoilt flowering, very low berry numbers and an extremely low crop in most varieties. These low crops were blessed with cool dry conditions throughout the three months up to vintage giving fabulous flavour development very much like the 2002 season which makes me confident of wines that will age brilliantly.
Nose: Aromatic and fresh, this wine opens with notes of white nectarine and lime, layered with elderflower and a subtle lift of guava, giving it both vibrancy and depth.
Palate: Lively and textural on the palate, it delivers flavours of stone fruit, grapefruit and cucumber, with a gentle edge of snow pea adding crunch and clarity.
Pairing: natural match for freshly shucked oysters with finger lime and ginger. The wine’s bright profile complements the dish’s zesty, savoury elements beautifully. Click For Recipe
