Story: One of the more intriguing wines created in biblical times was the ‘Tzimmukin’, using slightly dried grapes to increase strength and longevity. At K1 we have captured the essence of this ancient technique by slowly air drying our best parcels of Shiraz and Cabernet Sauvignon in baskets to produce a quintessential Australian blend.
Vintage: 2021 will be one for the record books in more than one way but as far as vineyards across South Australia are concerned it was near perfect. Higher than average rainfall over winter allowed vines to produce good canopy and the cool – dry summer gave us beautiful even ripening conditions. This slow ripening allows great flavour development and retention of natural acidity.
Nose: This Shiraz opens with a captivating array of aromas, including lavender, fennel, mint, blackberry, blueberry, satsuma plum, and violets.
Palate: On the palate, it showcases a delightful interplay of blueberry, fennel, and black pepper. The wine exhibits a distinct focus on caramel, with subtle hints of vanilla adding depth to its character.
Pairing: Middle Hill Shiraz pairs wonderfully with a hearty beef burger or a flavorful eggplant burger topped with a vibrant beetroot relish.
Oak maturation: 25% new French oak for 18 months.
