Story: One of the more intriguing wines created in biblical times was the ‘Tzimmukin’, using slightly dried grapes to increase strength and longevity. At K1 we have captured the essence of this ancient technique by slowly air drying our best parcels of Shiraz and Cabernet Sauvignon in baskets to produce a quintessential Australian blend.
Vintage: The 2016 vintage was in general very mild with low rainfall. The lack of rain looked like it would result in a quick harvest, but a big downpour in early February made sure the vintage was more evenly spread out. The yields were up on the couple of previous years and the quality is looking great.
Nose: This wine is dark and intense with aromas of black cherry, plum, eucalypt and black olives with savoury spice notes of cloves and cinnamon.
Palate: The palate is ripe, smooth and full-bodied with additional aromas of blackcurrant. The tannins are big, lush and balanced, followed by a lengthy finish.
Food Pairings: Be daring and try this wine with an exotic African kudu fillet with a creamy mushroom sauce.
Oak Maturation: 20 months in seasoned French oak.
